The WÜSTHOF Universal Hand-Held Knife Sharpener can be adjusted to sharpen either standard or Asian-style blades. Each setting provides two stages of sharpening for a total of four stages. First, use the carbide sharpening slot to smooth irregularities and refine the angle of the blade edge. Next, the knife can be drawn through the ceramic sharpening slot to finish honing the blade to a refined, razor-sharp edge.
