On a journey to stop buying pre-shredded cheese. When you purchase pre-shredded cheese, the only way to prevent it from clumping and molding is to add potato starch, corn starch, powdered cellulose, and natamycin. Block cheese has no additives or preservatives. (It also tastes better, melts better and is less expensive!) I wasn’t looking forward to cleaning this contraption but it took me less than a minute. Not a big deal. Still, I think i will shred a lot at a time and freeze in bags. That is what the long time cheese shredders recommend. (Also, try freezing block cheese before shredding to make it less messy.)
